CAJUN
CHICKEN

Chicken Breast |
1/2 per person |
Onion |
1 Chopped |
Green Pepper | 1 Chopped |
Whipping Cream | 1/2 Pint |
Mozzarella and Cheddar | Shredded 3/4 Cup |
Sour Cream | 2 Large Tablespoons |
Cajun Seasonings (either Joan's or mine) |
Fry the Chicken until about 3/4 done, drain and add the Onion & Pepper. Cook until the chicken is done.
Add Cream and Cajun Seasonings, when boiling add Cheese until melted, then add Sour Cream.
Let simmer for at least 20 minutes. If you like it a little hotter, then add some more seasoning at the end and mix.
This is great on rice or pasta.
